I was lucky to buy loads of persimmons last week for a really price and I turned them into muffins and ugly glazed cupcakes (yes, they were ugly). The cupcakes were not so different except they were much sweeter (they have different proportions of sugar and butter). My flatmates loved them and how do I know this? One of them had three in one day! So I didn't have any trouble finishing them off.
Ingredients
250 g flour
180 g pureed persimmons
2 teaspoons baking powder
1 teaspoon bicarb soda
pinch of salt
75 g butter
125 ml milk
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 eggs
100 g sugar
1/2 cup chocolate chips
Preheat your oven to 180 degrees C. Melt your butter, add your eggs, vanilla extract, milk and pureed persimmons and mix thoroughly. In another bowl, measure out your flour, sugar, baking powder, salt, bicarbonate soda, cinnamon and nutmeg. Add to your butter mixture and mix. Finally add your chocolate pour into a muffin tray. If you notice I cut out baking paper and baked the muffins in them.
Bake for 20 minutes. Serve warm or cold.
