Of course these are far from manly men, but that song was the only thing I could think of while typing this post. Ginger bread men. In case you haven't noticed yet, ginger is one of my favourite spices. So it only makes sense that I love these men. ;)
After making my financiers, I ended up with egg yolks and that had to be used (no food wasting in my home).
Men men men manly men men men sprung up everywhere as a result. You see this recipe calls for 1.125 kg of flour! per 4 eggs yolks. That's a lot! But it's been fun. I also got one of my flatmates to create her own 'man'.
Ingredients
1.125 kg plain flour
5 g salt
15 g ground ginger
5 g cinnamon
5 g nutmeg
5 g bicarbonate of soda
400g unsalted butter
400 g brown sugar
320 g golden syrup or honey
4 egg yolks
1 egg
Icing
125 g icing sugar
1 egg white
1/2 teaspoon freshly squeezed lemon juice
Preheat oven to 170 degrees C. Sift flour, bicarbonate of soda and salt in a large bowl. Mix butter, sugar and golden syrup using an electric mixer. OR if you're hard core like me, use an ordinary whisk (its painful). Mix until pale and creamy. Add eggs and egg yolks slowly and mix thoroughly. Add the dry ingredients in batches until well combined.
Divide dough into four even sized portions, flatten into a disc and cover in a plastic wrap or cling film. Refrigerate for at least 20 minutes or till you're ready to make some men.
Remove from the cling film and roll out in between two baking paper until about 3 mm thick. Cut into any shape of your choice using a biscuit cutter. Keep re-rolling and cutting until dough is finished. Bake for 15-20 minutes or until puffed and golden.
To make the icing, sift the icing sugar into a bowl. Put egg white in a bowl and add a table spoon of sugar. Use a spoon to beat and form a thick paste. Do this gradually till all the icing sugar is well mixed and avoid having lumps. Add your lemon juice. Fill a piping bag with the mixture and pipe the shapes on the biscuits.
Voila! You're then surrounded by men of your choosing and design. If only life could be that simple...
