Tiger nut flour…my new ingredient of interest. I adapted a recipe I found for a flourless chocolate muffin. This has no sugar because it’s aimed at those on a low carb diet.
I really like this just simply because I don’t always enjoy breakfast muffins described as healthy but loaded with sugar. Plus this is so moist!
Ingredients
1 1/3 cups of tiger nut flour
1 cup almond meal/flour
2 tsp of baking powder
1/4 tsp of salt
4 eggs
1/2 cup of water
1/2 tsp of agave or honey
1/3 cup of chocolate chips
Pre heat oven to 180 degrees C. Mix all the dry ingredients together. Mix all the wet ingredients. Add your wet ingredients to your dry ingredients. Bake for 25 minutes or until a toothpick comes out clean.
